Brewing

Our brewing philosophy goes hand in hand with our sourcing practices and our approach to roasting. We buy high quality specialty coffees, we roast them to highlight the unique flavors and aromatics without imparting roasty or smokey flavors in them, and we roast them so it’s easy to extract those unique flavors. Because our coffees are not over roasted we can brew deeper and have higher extractions without finding undesirable flavors. This means more flavorful light roasts. It’s where the magic of specialty coffee in San Luis Obispo lies.

Roasting

We love science. And we love roasting coffee. So naturally, we developed a scientific and methodical approach to roasting coffee. We measure, taste, experiment, taste, collect data, and let our passion drive to some tasty results. Like mad scientists, we rebuilt our roaster from the ground up, re-engineered the burner and control system, and now have exacting control on the consistency, clarity, and aromatics of our coffee.


Sourcing

When sourcing green coffee we never hold back on quality, sustainability and ethical sourcing. Our coffees usually originate from family owned farms and farmer co-ops, and we pay up to five times fair-trade minimums, ensuring farmers are paid for their hard work, and that we continue to get the best in specialty coffee.
